The San Pedro town has become a populated hot spot for tourists and locals. It also has a large business and commercial district. So with all this going on, it’s hard to be able to find a place that is truly a slice of paradise. But we managed to find a great hotel in Ambergris Caye.
First of all, I couldn’t believe the size of the property. It was shaped like a horseshoe surrounding a large private beach with tons of sandy areas and a pool in the heart of it.
We were welcomed with open arms by Kelly and Paul. They are such a great couple with tons of fun stories to tell about their adventures.
We headed up to dinner at the Blue Iguana Restaurant to catch the last rays of the sun while deciding which scrumptious dish to eat.
Grouper is the fish of the season in Belize and the way they cooked it, simply blew us away. My husband still talks about the meal we had at the Blue Iguana. And that’s a hard feat since we are not easily impressed when it comes to eating out.
Aside from specializing in seafood delights, they had a great selection of vegetarian options as well.
A little side track, my son is one of the most pickiest eaters there is. Few restaurants have gone out of their way to make him feel like part of our dinner party. I found that this place literally bent over backwards to make sure he would eat and eat well. He splurged on hot dogs (which no place offers at all) and asked for doubles and triples!
Our night out felt like we were hanging out with great friends with delicious food and beautiful settings!
