Foodies Delight – Tico Tacos

Every country has their version of tacos. This is the Costa Rica way and I prefer it over many others, because it’s simple and tasty. Plus you can get as creative as you want. Scroll down for some fun ideas.
INGREDIENTS
1 pound of cooked beef or chicken, shredded
20 tortillas (link)
Cabbage Salad (link)
1 tomato, cubed
1 teaspoon fresh coriander, finely chopped
1/2 cup grated cheese (you can choose whichever cheese you prefer)
oil
Sauce
1/2 cup ketchup
1/2 cup mayonnaise
1 teaspoon mustard
1 lemon
SUPPLIES
Deep frying pan
toothpicks
paper towels
bowl
Cook It Up!
Fill each tortilla with meat, roll them halfway and hold it tight with a toothpick. In a deep frying pan heated with oil, place the tortillas and fry until golden. Drain them in paper towels. In a bowl, on the side, mix up the ingredients for the sauce and squeeze the juice out of the lemon and mix it up!
Serve it Up!
Like most dishes the tacos will be served with the cabbage salad and tomato on the side. Pour the sauce over the tacos, sprinkle the cheese and garnish with fresh coriander. Best served immediately.
I prefer to eat my tacos with guacamole, salsa and sour cream instead of the sauce. So you can play with the condiments to find what suits your palate best.

Who said you can’t get a little funky with these tacos. Sure you can. Just add in a few veggies, herbs and spices to the mix and your Tico taco will be singing with flavor.
